Sugar Cookie Recipe

I am getting excited for V-Day mostly because it is something to focus on other then the awful Midwestern cold we trapped in. Bound to the indoors, I am forced to think of new recipes and projects for each and every holiday.
TJ has a extreme sweet tooth and is known to scower the house for a 11pm chocolate fix, so I thought I would be a nice fiance' and make him a pre-Valentine treat (recipe below). I even made him a little love note....awwww
Sugar Cookie:
1 C. of butter, softened
1 1/2 C. of confectioners sugar, sifted
1 egg
1 teaspoon of vanilla extract
1/2 teaspoon of almond extract
2 1/2 C. of all-purpose flour
1 teaspoon of baking soda
1 teaspoon of cream of tartar

In a large bowl, cream together the butter and confectioners' sugar until smooth. Beat in the egg and stir in the vanilla and almond extract. Combine the flour, baking soda and cream of tartar; blend into the creamed mixture. Cover and chill for at least two hours.

Preheat the oven to 375 degrees F. Divide the dough into two parts. On a lightly floured surface, roll each piece of the dough out to 3/16 inch in thickness. Cut into desired shapes with cookie cutters (in this case, a Heart). Place cookies 1 1/2 inches apart onto greased cookie sheets. 

Bake for 8 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.


Iceing:
1 C. of confectioners sugar
2 teaspoons of milk
2 teaspoons of light corn syrup
1/4 teaspoon of almond extract
Assorted food coloring

In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.

Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.
* The cookies where purchased from a local bakery. The recipe above is our favorite sugar cookie recipe and should give you similar results.
